Breakfast Quinoa
I know, you're probably thinking "quinoa for breakfast ?" However, this breakfast quinoa is a delicious, sweet, and protein-rich addition to your breakfast. Whether you top your quinoa with berries, nuts, or cinnamon, it's sure to be tasty! Below is a recipe for Banana Maple Walnut quinoa, but feel free to change it up and add your own ingredients!
Ingredients: (Makes 1 large serving/2 small servings)
1/2 cup quinoa (any type)
1 cup almond milk (can substitute for water)
1/4 teaspoon cinnamon, plus more for topping
1/4 teaspoon ground nutmeg
Pinch of salt
1 Banana
1/4 cup walnuts
Maple syrup for drizzling
Steps:
Add quinoa, almond milk, cinnamon, nutmeg, and salt to small saucepan over medium-low heat until boiling
Boil until quinoa has "popped" open and softer, approximately 15 mins (add a dash of almond milk if it starts to stick or get too dry)
Remove quinoa from heat and put in bowl
Add sliced banana, chopped walnuts, and a drizzle of maple syrup. Enjoy!
Breakfast "Ice Cream Sundae"
Yes! "Ice cream" for breakfast! Using frozen yogurt for ice cream, this delicious breakfast treat resembles the ice cream sundae dessert we know.
Ingredients: (Makes about 4 servings)
"Waffle" Bowls:
1 cup rolled oats + 1/4 cup oat flour (can make oat flour in food processor or coffee grinder)
Pinch of salt
2 tbsp coconut oil
3 tbsp honey
1/2 tsp vanilla extract
Topping Ideas:
Frozen yogurt (freeze vanilla or other sweetened yogurt in freezer for 1-2 hours
Berries
Sliced banana
Granola
Chopped Walnuts
Fruit
Shredded coconut
Steps:
Heat oven to 350° and spray or line 4 muffin tins
Heat coconut oil in microwave until melted and mix in the rest of the ingredients except oats and oat flour
In medium bowl, add oats and oat flour and mix in the liquid mixture from previous step
Place about 1/4 of the mixture in each of the 4 muffin tins (or more tins if needed) and press down to form cup
Bake for 15-20 minutes or until lightly browned and not wet
Cool for 15 minutes or until hardened
Scoop frozen yogurt into cup using spoon and add desired toppings. Enjoy!
Breakfast Burritos
The possibilities are endless with this breakfast burrito recipe! Savory, tasty, and more, this breakfast burrito is sure to become a popular hit in your house. Even better, freeze and microwave for a quick breakfast on any morning!
Ingredient Ideas: (Makes however many you want!)
Flour or whole wheat tortillas
Scrambled eggs
Spinach
Shredded or goat cheese
Sweet potato
sausage or diced ham
Black beans
Avocado
Chopped bell peppers
Chopped tomato
White or brown Rice
Onion
Steps:
Choosing desired toppings from above, assemble your own breakfast burrito(s)!
Freeze up to 3 months wrapped in parchment paper or foil (remember to mark the date with a sharpie!)
To reheat, wrap in damp paper towel and microwave for 3-5 minutes using the "defrost" function on your microwave and then an additional 1-2 minutes without the defrost setting
Creamy Spinach & Egg Pita
I have always loved the combination of cream cheese and scrambled eggs, whether it be with smoked salmon in a crepe or plain. This little twist adds spinach, a wonderful way to get in veggies in your breakfast. Feel free to add or change your own ingredients too!
Ingredients: (Makes 2 half pitas/1 full pita)
Pita pocket or pita, torn or cut in half
2 eggs
1/4 cup cooked spinach
2 tbsp cream cheese, cut into cubes
Pinch of salt
1/4 cup grated parmesan cheese (optional)
Steps:
Scramble the eggs in a small skillet, and mix in salt, cream cheese and spinach (and parmesan if using)
Spoon the egg mixture into each half of a pita pocket and enjoy immediately!
